MEET THE PENNINGTONS

Scott and Christina Pennington share a rich personal and professional journey rooted in family, community, and service. They met over 20 years ago at a “Men Who Cook” fundraiser where Scott served as one of the chefs. Their connection evolved from a friendship to a legal partnership and, in 2011, into a romantic relationship. They married in 2017, holding their reception at the same Montclair Women’s Club where they first met. Both are accomplished legal professionals. Scott serves as a Municipal Court Judge in Hoboken, while Christina is Director of Paralegal Studies at Essex County College. In addition to their full-time roles, they operate a law firm, Bennett Pennington LLC, offering estate planning services, criminal and traffic defense, and real estate services to private clients and the public through free seminars. “We believe people work hard all their lives and deserve to have a plan for their legacy,” Christina explains. Their commitment to community extends through involvement in historically Black fraternal organizations. Christina is a member of Delta Sigma Theta Sorority, Inc., and Scott is a member of Alpha Phi Alpha Fraternity, Inc. These organizations, part of the Divine Nine, provide a deep network for service and support. “Wherever you go in the world, there’s a brother or sister ready to lend a hand,” Christina notes.

Family is the heart of the Penningtons’ lives. They have three children, including a son who passed away but left behind their only grandson so far. “Brad graduated from Rutgers Law, just like his father and uncles,” Christina shares with pride. Scott adds, “My son was the sixth generation of men in our family to finish law school.” Their daughters live nearby, with the youngest one floor above them. This arrangement reflects Christina’s upbringing in a multigenerational household, and she cherishes being present in her granddaughter’s everyday life. Genealogy is a shared passion. Scott traces his family history back to the 1500s. One notable ancestor, Lewis Freeman, was the wealthiest Black man in Chatham County, North Carolina, in 1800. Another, Robert T. Freeman, was the first Black man in America to earn a doctorate in dentistry from Harvard in 1868. These discoveries underscore the legacy of education and excellence that runs deep in the Pennington lineage. Christina’s family has its own legacy of connection, hosting reunions for 130 consecutive years in Durham, North Carolina, on Mother’s Day weekend—a tradition predating the official holiday. The family published two books honoring successive generations. The latest book highlighted her father’s story. The Penningtons’ lives reflect a profound dedication to family, education, and service. Their story stands as a testament to love, legacy, and the power of preserving history while laying a solid foundation for generations to come.

HEALTH & WELLNESS The journey with our bodies is complex, often full of conflicting messages. We are told to strive for “ideal” physiques while also being encouraged to embrace self love, creating a confusing dichotomy. Where is the line between healthy goals and harmful fixations? Making peace with your body doesn’t mean abandoning your goals. True peace involves cultivating respect and acceptance, regardless of size or shape. Understand that worth isn’t defined by your body and that health manifests in various forms. This involves shifting focus from aesthetic ideals to overall well-being. This doesn’t mean giving up on a healthier lifestyle. Setting goals like increasing strength, improving endurance, or adopting a nutritious diet can reflect acts of self-care. The key difference lies in the intention and approach. When driven by self-hatred or a desire to conform to unrealistic standards, pursuing body goals becomes destructive. It can lead to disordered eating, exercise addiction, and a distorted self-image. However, a genuine desire to enhance health and well-being makes these goals empowering and positive. Ultimately, making peace with your body involves balancing acceptance and growth. It honors your body’s needs, celebrates its capabilities, and nourishes in a way that promotes both physical and mental health. You alone determine what that looks and feels like for you. It’s a lifelong process that demands patience, self-compassion, and a willingness to redefine what “success” truly means.

RECIPE OF THE MONTH
INSTRUCTIONS
SHEET PAN QUICHE LORRAINE Dough Chilling Time: 1 hr 15 mins Prep Time: 40 mins Bake Time: 55 mins Servings: 12 This easy sheet pan quiche lorraine has a flaky crust and a cheesy filling punctuated with bits of crispy bacon. It can easily feed twelve and is completely versatile and customizable.
BUTTERY PIE CRUST 1. Combine the flour, sugar, and salt in the bowl of a food processor fitted with a steel blade. Pulse a few times to mix. 2. Add the butter and shortening and pulse about 10 -12 times, until the fat is cut into the flour mixture and it is pea size. 3. Pour in about ⅔ of the ice water and pulse a few more times until a ball begins to form, adding more water as needed. Be careful not to overmix. The dough should not be completely blended, it will come together on the counter. 4. Scrape dough onto the counter and form it into a flat disc. Wrap it in plastic wrap and refrigerate for at least an hour or overnight. (Dough can also be frozen for several weeks. Defrost in refrigerator before proceeding.) 2. Lightly dust the dough with flour and between two sheets of wax paper roll the dough is a little wider and longer than a half sheet pan. (I like to gather the pastry scraps, roll out and cut it into decorative shapes. They can be placed on the tart in decorative pattern and brushed with cream before baking.) 3. Carefully wrap the rolled doll around the rolling pin and unravel over the sheet pan so the edges over-hang evenly. Place in refrigerator or freezer until well chilled, 15-20 mins. Crimp the edges with MAKE THE SHEET PAN QUICHE 1. Preheat the oven to 375 degrees.

Line the crust with foil or parchment paper and fill with pie weights or dried beans/rice and bake until pale golden, about 20 mins. Be sure the edges are fully covered with the foil or parchment and the pie weights are pushed into the sides. 5. Carefully remove the weights and continue to bake for 10 more minutes. 6. While the crust is baking whisk the eggs in a large bowl. Continue to whisk in the cream, milk, salt, and pepper. Stir in the crumbled bacon and cheese. 7. Pour the egg mixture into the prepared crust and bake until the custard is set, about 25 mins. Slice • The best way to transfer the rolled dough to the sheet pan is to carefully roll it onto your rolling pin (like a roll of paper towels) and then move over to your sheet pan and unroll it gently. Start at one end and unroll it as you move down the sheet pan. • Be sure to prick the bottom of the dough a few times before baking to prevent it from bubbling. • When blind baking your pie shell, be sure the weights (or uncooked rice or beans) go right up the sides to avoid the sides collapsing or shrinking. and serve warm. When he’s not on the field, Michael enjoys swimming, attending sporting events, visiting the beach, and roller skating, keeping his lifestyle vibrant and active. A key figure in Michael’s journey has been Coach Michael Buerster, whom he credits for improving his communication skills and teaching him to manage various situations during practices and games. “Coach Mike’s easy instruc tions and support have really helped me,” Michael notes, attributing much of his teamwork improvements to his guidance. This month, we celebrate Harry Klein, an 11-year-old musi cal prodigy from Maplewood Middle School, whose passion for music and performance sets him apart. Playing both elec tric and acoustic guitar since the tender age of five, Harry re cently expanded his musical talent by picking up the bass last year. “I enjoy getting comfortable with the instrument enough to perform for others,” Harry shares, embodying both his love for music and his flair for performance. Inspiration struck Harry early on, as the band Kiss capti vated him with their music and dynamic stage presence. “Their style of performance inspired me a lot,” he says. Recently, Harry has also become a big fan of singer-song writer Noah Kahan, which has broadened his musical tastes and aspirations.

HOME DESIGN “I love what you did with the powder room,” said my wife. I was showing her the newly renovated kitchen I designed and the new powder room I built for a homeowner prior to putting the house on the market. (It’s now under contract, thank you very much.) “This one is rather tame, given some of your other designs,” she added. I laughed, “Maybe I’m getting conservative in my old age.” “But sometimes being creative with paint is all you need, especially if you’re on a budget and can’t afford wallpaper or the millwork needed for wainscoting.” “Right,” I responded, “and they can be so much fun!” (See picture below in the ad.) “Like that time you took a picture of peonies and had it blown up and made into a huge decal that you put in an all-black powder room,” she said. “Or the powder room with the wallpaper filled with cranes, then put up a sconce light that was fashioned to look like a nest with an egg in it!” I responded.
“I loved the ones where you did a dark paint on wainscoting, then put a William Morris style wallpaper above,” she said. “Ah, yes, the green and blue ones,” I added. “Those were beautiful...” “Yes, says the woman who works for a luxury wall covering company,” I chuckled, then added, “Powder rooms are a great place to tell a little story separate from the rest of the house.” “Exactly,” she exclaimed. “The whole house is a story, each room a chapter in that story, but the powder room can be a little story within the story and a great place to express yourself.”

POWER OF SLEEP In 1952, Eugene Aserinsky, a graduate student at the University of Chicago, significantly advanced the understanding of sleep. He studied the eye movements of sleeping infants and observed periods when their eyes darted beneath their eyelids, alongside brainwaves akin to those in wakefulness. Between these active phases were longer periods of still eyes and calm brainwaves.

JUNETEENTH: A CELEBRATION OF FREEDOM
The Durand-Hedden House & Garden Association and the South Orange Maplewood Community Coalition on Race invite community members to celebrate Juneteenth on Saturday, June 14, from noon to 5 p.m. at the beautiful grounds surrounding Durand-Hedden House (523 Ridgewood Road, Maplewood). Juneteenth commemorates the announcement on June 19, 1865, of the abolition of slavery in Texas—18 months after the Emancipation Proclamation and five months after the passage of the Thirteenth Amendment, which ended slavery in the United States. In 2021, the Juneteenth National Independence Day Act recognized Juneteenth as a federal holiday.
This event highlights themes of freedom, resistance, and remembering the past while looking towards the future. It welcomes all ages. Attendees observe the history of enslaved people in New Jersey through a powerful museum exhibit that illustrates the state’s long road to emancipation, and through Gail Safian’s “Slavery in New Jersey: A Troubled History,” a book tracing the evolution of slavery through the end of the Civil War. Enjoy fun and engaging outdoor events, including historical reenactors, musical performances, face painting, crafts, and storytelling. The Coalition’s final
Integrated Art Circle also features in the festivities. Yahaya Kamate, who performed with the National Ballet of Côte d’Ivoire, leads a West African traditional dance class.

LUKE SCANZERA AT FELINA STEAK SOUTH ORANGE
Welcome to Felina Steak South Orange, where Luke Scanzera, a passionate hospitality professional, is dedicated to crafting memorable experiences. With two years in business, Luke says, “It’s been a rewarding journey of bringing people together through incredible dining.”
A graduate of Virginia Polytechnic Institute and State University with a B.S. in Hospitality and Tourism Management, Luke’s expertise spans restaurants, casinos, private clubs, events, and live entertainment. As the Restaurant Manager, he works closely with the team to deliver exceptional culinary experiences and manages event sales for the unique space above the restaurant. “Our venue sits in the heart of the old South Orange Village Town Hall, providing a historic charm that makes events like weddings and corporate meetings truly special,” Luke shares. Luke’s passion for hospitality began at age 10, cooking alongside his parents. “Those early days in the kitchen taught me the magic of food in bringing people together,” he recalls. Starting as a busboy, he has grown through various roles, solidifying his love for the industry. What distinguishes Felina Steak from competitors is a commitment to culinary excellence and ingredient integrity. “At Landmark, we believe in sourcing and preparing food with care, which is why our in-house Butcher Shop and the Dancing Goat Farm are vital to our operations,” he explains. Proud to be a “memorymaker,” Luke says, “Seeing a guest smile during their meal makes all the hard work worthwhile.” While specific community contributions are not detailed, Luke and his team focus on creating joy and lasting memories for every guest.
