The Coral Restoration Foundation deals with projects that look towards the future by saving and replenishing coral reefs, which are one of the Earth’s main ecosystems. As chief development o ffi cer Martha Roesler quite chillingly summarizes: “We have no idea what that will mean for humanity if we lose this ecosystem.” Travel is often considered to be one of the most rewarding things that we can do with our time. In this issue’s Explore section, we look at the best hotels for wine lovers (including one in Argentina where you can become a winemaker yourself by owning part of a vineyard). We try and test two new openings in Israel and Mexico City, respectively, and take a deep dive into Chicago and Copenhagen. And now, for the big one — our Top Watches of the year. Roberta Naas, our contributing timepiece editor and expert on all things horological, has been meticulously curating this selection of the latest and greatest launches for the past six years. With so many spectacular models out there, Naas implements a strict criteria to whittle down the list and present the most magni fi cent models — including one that breaks the million-dollar mark. Elsewhere in this issue, Naas goes behind the scenes at Vacheron Constantin to look at the brand’s Tribute to Great Civilisations collection. An instance where you might be wanting time to slow down is during an epic road trip through some equally epic scenery, behind the wheel of a gorgeous car. Alexandra Cheney checks out the top marques with the top marks (sorry) in this year’s Top Cars feature. Spending an entire year on this feature, Cheney personally test drives each car to ensure it is up to scratch. Time well-spent indeed.

The art of travel Working from home may be the norm these days, but there is nothing ordinary about this bureau. In 1929, British orchestra conductor Leopold Stokowski commissioned Louis Vuitton to design and manufacture a special-order traveling o ffi ce trunk. One of the leading conductors of the early and mid-20th century, he gained his reputation as musical director of the Philadelphia Orchestra, conducting the music for and appearing in several Hollywood fi lms, including Disney’s Fantasia . The original Secrétaire was designed to allow Stokowski to remain dedicated to his work from anywhere in the world. A recon fi gured travel trunk, the original design had a box for his typewriter, adjustable shelves, a drawer for sheet music, a hanging fi le drawer and a foldout desk. It quickly became a highly coveted piece and, as a result, Louis Vuitton (eventually) made this piece available for special orders. To coincide with the 2021 200th anniversary of Louis Vuitton’s birth, the Secrétaire Bureau 2.0 was reinvented for elevated remote working. Monogram-coated canvas and gold-hued hardware dress the exteriors and, as the bureau is opened, the collapsible table — generously resized to accommodate today’s work-from home lifestyle — rises directly from the front panel. A folding stool slots out from its dedicated space and is joined by fi ve drawers and two large spaces for storing documents. Created at Louis Vuitton’s workshop in Asnières, France — the brand’s fi rst workshop opened by Louis Vuitton himself — the bureau’s design re fl ects a compelling sense of tradition and heritage. There are two options for the fi nish: For those who prefer a sleek appearance, varnished wood creates an elegant and understated look, while the straw marquetry option creates a unique optical illusion. Straw marquetry is a craft that only a handful of artisans are able to create, with French master craftsmen delicately using strands of straw to cover the object. But whichever model you choose, your bureau will feature the iconic initials of an ‘L’ on the interior door and a ‘V’ across the main body. THE PRIVATE SKIES While Honda is a regular on the racing circuit with teams competing from Formula One to NTT IndyCar, there are now more opportunities to take off with the iconic Japanese conglomerate that designs and manufactures everything from lawnmowers to, most recently, private jets In fact, over the past year, two new entrants are now offering its distinctive HondaJet in fractional, jet card and charter programs. Atlanta, Georgia-based Volato and Las Vegas-based Jet Token are new to the market. They join Greensboro, North Carolina-based Jet It in offering the very light jet to customers who don’t want to own an entire aircraft. Interestingly, they have each taken a different approach to how they are selling airplanes. Jet It uses a by-the-day formula with fractional shares based on the number of days you want to fly per year. The starting point is 25 days. The way it works, you buy the share and then pay the monthly management fee. The program’s structure means the more you fly in a day, the lower your effective hourly rate when you factor in all expenses. It means that if you fly multiple legs on the same day by visiting several business locations, the Jet It program becomes highly cost-effective. While the bulk of its 20-plus fleet is based in the US, Jet It recently expanded into Canada and has its sights set on Europe. Plus, its Red Jet Squadron allows qualified owners to pilot their aircraft alongside its highly trained captains. Volato is the brainchild of serial entrepreneur Matt Liotta, a private flyer who owns a share of the
popular Embraer Phenom 300 light jet. In the HondaJet, he saw the answer to flights under two hours with five or fewer passengers and most typically with just one or two passengers. He also wanted a model that didn’t demand the fine calculations of how much you will fly annually for the next five years — part of the commitment to fractional ownership. By ‘decoupling’ ownership from flying (Volato owners buy shares of the aircraft), they aren’t penalized by under- or over-flying. Owners also earn charter revenue for their aircraft at the same percentage of the share they bought. Earlier this year, Volato opened a base in Carlsbad,
California — a significant move since owners don’t pay repositioning for flights within two hours of a base. Other locations as of this writing are Atlanta, Baltimore, Houston, St Augustine and Ft Lauderdale. Jet Token also took flight last year. It uses the highly rated charter operator and management company Cirrus Aviation to operate its HondaJet fleet, which includes a primary service area limited to the West, including Los Cabos. It offers a traditional share program where your slice of the aircraft translates into a specific number of annual flight hours. However, its shares are only on 500 flight hours per year as opposed to the standard 800. Executives say this more conservative approach reflects expected utilization and will mean owners are less likely to find themselves put off-fleet. Unlike Volato and Jet It, Jet Token also sells jet cards if you aren’t ready to buy part of a private jet. BEYOND THE CELLAR DOOR
No matter our age, discovering a concealed trapdoor or a secret entrance always evokes a childlike thrill. Even more thrilling if, behind that very door, lies a veritable treasure chest of fine wine. Spiral Cellars is a UK-based company that creates bespoke wine cellar designs — some of which cost around the half-million-dollar mark. The company’s creative director, Mark Dickens, is an avid wine collector himself and has dreamt up some fantastical cellar designs for yachts, ski chalets, lodges, boutique hotels, Michelin-starred restaurants and grand ancestral seats. But Dickens is not exactly what you’d picture when thinking of a classic wine collector. He was formerly a pink-haired bass player who toured with ’80s rock stars, studied art with the famed Damien Hirst, and held a position as a gamekeeper. Perhaps Dickens’ varied past helps with the whimsical design process, as there is no one-size-fits-all when it comes to creating a cellar.
Some of Spiral Cellars’ previous projects include a disused elevator shaft, a broom cupboard, a guest shower room and a swimming pool. Along with the cellars, the company also creates bespoke wine rooms and display walls. Not just visually impressive, the cellars create the optimum environment for wine storage; as Dickens explains, a wine room without the correct temperature and humidity is just a room. He declares: “There are plenty of cellar designers who can push the boundaries of art, but often this is at the expense of the wine.” Client confidentiality is of utmost importance, so Dickens remains tight-lipped on any specific commissions (but previous clients include heads of state and a number of famous faces). As for his dream project? “One that allows me to go above and beyond the realm of cellaring creativity, to marry both the art and the science of wine storage.” spiralcellars.co.uk

A tree revolution in Bordeaux Insect hotels and weed-nibbling sheep in vineyards, recycled paper for labels and leftover grape skins turned into soles of running shoes are a few recent environmental initiatives in the world’s largest fi ne wine region. Once thought of as stodgy and slow to change, Bordeaux has been on a sustainability fast track for the past decade. Last year, Pomerol, home to Château Petrus, became the fi rst appellation to ban herbicides. Next year Château Cantenac Brown in Margaux will debut a new rammed earth cellar that will need no air conditioning. The buzziest trend is agroforestry, which involves planting trees and bushes among the vines, as was done in the past. “A tree in the middle of a fi eld or on its perimeters has a positive impact on water, the climate and the quality of the soil,” according to agronomist Alain Canet, a specialist in agroforestry who worked with Château Cheval Blanc and sees trees “as a precious tool for viticulture.” Claire Villars-Lurton, owner of Château Haut-Bages Libéral in Pauillac, is a pioneer in the approach. Her estate is one of the few crus classés certi fi ed as both organic and biodynamic. After experimenting with agroforestry for about 15 years, Villars-Lurton began planting one row of trees for every 14 rows of vines last

year, swapping some vines for trees. Not just any variety will do. Her carefully selected mix includes peach, cherry, walnut, birch, country maple and Siberian elm, which are symbiotic with vines. Among the long list of bene fi ts is the way the branches and leaves shelter birds and insects to increase biodiversity and o ff er shade from the midday sun during increasingly frequent heat waves. Trees are also at the heart of the passionate farming approach at Château Cheval Blanc, one of the most famous estates in Saint-Emilion. That was just beginning a decade ago, with the opening of a gorgeous cellar whose roof was covered with wild fl owers, bushes and trees. Now 1,000 fruit trees are planted in and around the vineyards. A tree’s root systems promote the growth of microscopic fungi that stimulate soil fertility by giving vines the trace and mineral elements they need. President Pierre Lurton and technical director Pierre Olivier Clouet plan a two-and-a-half mile green band of hedgerows to border the entire estate. Last fall Cheval Blanc released a 47-page manifesto to detail their e ff orts to fi nd long-term solutions to environmental issues created by climate change. One of them is agroforestry. The big takeaway: It’s all about taking inspiration for vineyards from nature.
