I n one way or another, restaurant oper ators’ profit margins and operational efficiencies have always been under siege—but the last couple of years have been unlike anything the industry has ever seen. While foodservice and drinking establishments added 60,000 jobs in September, according to the U.S. Bureau of Labor Statistics, the hospitality sector still lags about 500,000 jobs behind pre COVID employment levels.
