Helen’s Delight Who was Helen? No one knows but the Outlaws say Rosamund Bennett, the wife of a long ago Berea Christian Church pastor, Rev. J. Robert Bennett, always made Helen’s Delight. The Bennetts came from Tarboro, North Carolina and were not, as far as they know, related to the Richard Bennett family of North Suffolk.

2 cups sugar 1 cup water 2 cups flour 1 tsp. soda 1 stick butter ½ cup buttermilk

½ cup shortening 2 tsps. cinnamon 4 tbsps. cocoa 1 tsp. vanilla 2 eggs Dash of salt

Mix together sugar and flour in a large bowl. In a saucepan, bring butter, shortening, cocoa and water to a boil. Pour mixture over flour and sugar and mix well. Add soda, buttermilk, cinnamon, vanilla, eggs and salt. Bake 20 minutes at 400 degrees in a greased and floured sheet pan, 11” x 17”. Icing

1 stick butter 1 tsp. vanilla 4 tbsps. cocoa 1 cup nuts, chopped 6 tbsps. milk 1 box confectioners’ sugar Bring first five ingredients to a boil. Add the box of sugar and mix well. Spread on hot cake. Can be served while hot.
