residue interactions or simple chemical modifications can lead to significant changes in antioxidant properties. They could be used to design tailored and efficient antioxidant systems. Particularly, multiphase systems such as emulsions, food matrices, or skincare formulations, which involve a multitude of components simultaneously.
Amino acids have potential as active antioxidants in food, nutraceutical, and skincare. Consistent and reproducible performance, improved shelf life, and a thorough understanding of their behavior during processing and storage need to be addressed through further research. Bridging the gap between laboratory findings and real-world application will be key to unlocking the antioxidant potential of amino acids for end-users.
