Kille r Cla m Di p While this recipe isn’t considered a cool down superstar. In my humble opinion, it’s food for the soul. • 1 8-oz block Philadelphia Neufchatel cheese, softened • 6 to 8 shakes Lea & Perrins Worcestershire sauce • 1 6.5-oz can chopped clams (I like Snow’s but any brand will do) • ¼ lemon Add Neufchatel cheese and Worcestershire sauce to a medium bowl and, using a fork, mash together to combine. Add the clams, including the broth, and mix well. Squeeze the lemon into the cheese/clam mixture and stir. Taste and add more Worcestershire sauce and/or lemon to your liking. The dip will be loose but will fi rm up when chilled. Transfer to a serving bowl, cover and refrigerate overnight. Serve with the best potato chips you can fi nd (I won’t fault you for using a spoon).
Blac k -eye d Pe a Sala d With Your Choice of Tuna or Chicken As versatile as it is elegant, add or omit vegetables to your liking. • 1 28 oz can black-eyed peas, drained and rinsed • 1 small sweet onion, chopped • 1 red pepper, chopped • large handful of fresh cilantro, parsley, or both, chopped • 1 can of high-quality tuna or shredded rotisserie chicken, your choice • white wine vinegar • olive oil • freshly-ground pepper Add the black-eyed peas, onion, pepper and herbs to a large bowl and mix. Season with white wine vinegar, olive oil and freshly-ground pepper. Add the protein and combine. Taste and adjust the vinegar and olive oil to your liking. Cover and refrigerate overnight. Before serving, taste again. The beans will have absorbed some of the liquid. Add more vinegar and olive oil to taste.
