Eric’s job as chef of New York City’s three-Michelin-starred Le Bernardin takes him around the world in search of gastronomic inspiration. While he loves Kanazawa, Japan for its deeply rooted traditions, his favorite destination is the Cayman Islands. He visits annually for the Cayman Cookout, to see his restaurant, Blue, and enjoy the white-sand beaches. p49

It comes as no surprise that Stockton, co-founder and CEO of OceanGate (a venture that helps fund manned ocean dives in the name of research) is an adventure traveler himself. He loves to explore new places, and he particularly enjoys British Columbia’s Desolation Sound to fish and collect oysters; watch whales, dolphins and seals; and explore the uncharted wilderness. p71

Alness, Scotland RICHARD PATERSON Master distiller, The Dalmore Richard is one of the most revered figures in the Scotch whisky industry— after all, he’s nicknamed 'the nose' for his keen ability to nose whisky. The native Scot and third- generation whisky blender leads tastings and hosts events throughout the world, but in his free time you can find him in Italy enjoying food, wine and history. p68
