WINE Downstairs holds a magnificent wine cellar, designed by Swiss architect Mario Botta. It is considered one of Europe’s finest wine cellars, and the room’s grandeur is an accurate reflection of more than 20,000 bottles of the fine wine that it stores. The villa also has access to the wine cellar of Silvio Denz, an avid wine enthusiast and collector, totaling a collection of about 60,000 bottles, some 2,500 different wine references. Highly accredited head sommelier Romain Iltis, awarded Meilleur Sommelier de France 2012 and Meilleur Ouvrier de France 2015 (sommelier), manages the wine program with zealous attention. Romain is an advocate of wines of the Alsace region, and the wine list dedicates the majority of space to Alsatian wines, which Romain personally collects from winegrowers, but also encompasses a selection of American and Bordeaux wine, particularly century-old Sauternes, including Château d’Yquem dating back to 1865. DINE Chef Jean-Georges Klein arrived at the restaurant in late 2015 with multiple accolades to his name, including a three-Michelin-star award. Heading up the kitchen, Klein led the team to attain two Michelin stars within just four months of its opening. Klein devises a menu of bold, inventive dishes, working closely with head sommelier Romain Iltis to pair the wine program to several imaginative menus. Built in 1920 by René Lalique, the villa opened to the public in September 2015 following a redesign under the direction of chairman and CEO of Lalique, Silvio Denz, who acquired the brand in 2008. Villa René Lalique has been restored with its original exterior design, a combination of local Alsatian architecture and other influences such as the Normandy style, while the gourmet restaurant provides a sleek, ultra-modern addition. Villa René Lalique oozes sophistication while embodying the family glassmaking history with black-and-white photos lining its walls. Nestled in the heart of the Northern Vosges Regional Nature Park in the village of Wingen-sur-Moder, Villa René Lalique overlooks a picturesque meadow with neighboring horses.
