The 10 rooms and three suites of this intimate château were all decorated by Lady Tina Green and Pietro Mingarelli to retain the authenticity of the region. The three suites each have their own style, featuring wooden alcoves and touches of rich burgundy and green against a backdrop of cool oyster, white and marble. Tastings and tours are by appointment; go for a vertical tasting of four vintages, or taste three wines paired with food, before picking out a bottle of Château Lafaurie-Peyraguey to take home from the winery’s boutique. The former executive chef of two-Michelin-starred Villa René Lalique, Jérôme Schilling, has brought his philosophy of championing seasonal local produce, aiming to turn tradition on its head by discovering different ways of using Sauternes wine. Try the vegetarian Blend menu, in which each of the seven courses match the terroir of the estate, or go for the Premier Cru menu, which you can customize. We love the crisp lobster with fresh pollen, piquillo pepper and pineapple sage. Finish with a dessert by pastry chef Stéphane Corolleur, who creates sweet plates with Sauternes pairings in mind. Lalique may primarily be known for its fine crystalware, but the heritage brand has also succeeded in applying its artisanal skills and intuitive sense of l’art de vivre elsewhere. Transforming this historic wine estate in Sauternes — marking the 400th anniversary with its June 2018 opening — the hotel sits amid the region’s verdant vines. Swiss architect Mario Botta added a modern extension to the 17th-century building and Lady Tina Green and Pietro Mingarelli, who created the Lalique Maison collection, artfully styled its interiors. From the sparkling decanters that embellish the library to the crystal panels enhancing the hallway, Lalique designs inspired by the estate’s vines decorate each elegant space.
