The 10 rooms and three suites of this intimate château were all decorated by Lady Tina Green and Pietro Mingarelli to retain the authenticity of the region. The three suites each have their own style, featuring wooden alcoves and touches of rich burgundy and green against a backdrop of cool oyster, white and marble. The former executive chef of two-Michelin-starred Villa René Lalique, Jérôme Schilling, has brought his philosophy of championing seasonal local produce, aiming to turn tradition on its head by discovering different ways of using Sauternes wine. Try the vegetarian Blend menu, in which each of the seven courses match the terroir of the estate, or go for the Premier Cru menu, which you can customize. We love the crisp lobster with fresh pollen, piquillo pepper and pineapple sage. Finish with a dessert by pastry chef Stéphane Corolleur, who creates sweet plates with Sauternes pairings in mind.
