Recipe by Christy Christmas and Katie Elliott, Blackwater Bitters, Lynchburg GEORGIA PORCH SIPPER Fire ies, grilling out with your friends, sitting on the porch with a cool beverage — this is summer to us. Every year we await the peaches, summer’s symbolic fruit! We make cobblers, pies, and mixed drinks. Beat the heat this summer by sipping on this cocktail when the dog days get to be too much. And if a little bit runs down your chin, remember: that’s part of the experience.
INGREDIENTS: Cocktail 2 ounces bourbon 1 ounce freshly-squeezed lemon juice ½ ounce peach simple syrup 2 droppers Blackwater’s Cedar Bitters Ice cubes Club soda Peach wedge and mint sprig, to garnish Peach Simple Syrup 2 medium peaches, sliced 1 cup granulated sugar 1 cup water

PREPARATION: For the syrup
Combine peaches, sugar and water in a saucepan over medium-high heat and bring to a gentle boil, stirring occasionally. Reduce heat and simmer for 5-10 minutes, until the peaches begin to break down. Remove from heat and let stand at room temperature for 1 hour. Strain syrup and place in a container (syrup will keep up to one month in the refrigerator). For the cocktail Combine bourbon, lemon juice, peach simple syrup, 1 dropper cedar bitters and 1 cup of ice cubes in a tin shaker. Shake vigorously (20-30 seconds) and strain into a highball glass or mason jar lled with ice. Top with club soda, and 1 more dropper of cedar bitters. Garnish with peach wedge and mint.
